A delightful blend of strawberry-flavored gelatin, strawberry ice cream and strawberries produces a smooth and flavorful dessert. It's one of our favorites because it isn't too sweet.

Ingredients:
- 1 baked 9-inch pastry shell, cooled
- 1 pkg (3 oz.) Strawberry Gelatin
- 1-1/4 cups boiling water
- 1 pint strawberry ice cream
- 1-1/2 cups halved fresh strawberries
Preparation:
Bake pastry shell and set it aside to cool. Add boiling water to gelatin and stir until dissolved. Gradually add ice cream. Stir constantly until ice cream is melted. Chill until thickened, but not set (approx. 15 to 25 minutes). Fold in strawberries and pour into pastry shell. Chill until firm. Garnish with whipped cream or non-dairy whipped topping when served and additional fruit if desired.Cover in refrigerator if pie is to set overnight.
Sugar-free gelatin and yogurt (in place of ice cream) may be substituted for a lower-calorie pie.
