Ybor City's casitas kitchen was in the back of the cottage. Much as it is today, it was the center of the household, but it was certainly smaller than the kitchens of today and there were no modern conveniences.

Food was cooked on a wood-burning stove and the family would eat at a small table in the corner. If they were fortunate enough to have an icebox, they could keep milk and other foods cold. A hand pump delivered "running" water to prepare meals and wash dishes.

With no indoor plumbing, the "bathroom" was out back and the immigrants most likely pumped the water, heated it and bathed in a wash tub in the middle of the kitchen floor.
